Warm water lobsters come from waters with warm climates. Such as California, the Caribbean and even here, Florida. Warm lobsters are only harvested for their tail, and tend to be mushier than cold water lobster. Warm lobsters are typically cheaper, because they’re less desirable than cold water lobsters.
Cold water lobsters can be found in cold waters such as eastern United States and Canada. The cold water lobster is tender and can have all the meat eaten from it. They are more expensive, but way better and way worth it.
We use cold water Maine lobster for our seafood towers and is one of our fan favorite menu items, the surf and turf. Used for buffets, plated, and wine dinners for our guests!
